What Am I Eating?

I thought that I could answer a question that Connie posed so that everyone would know what in the world I am eating. Well, I have been eating veggies, fruit, chicken, fish, a little of beef, brown rice, potatoes, & sweet potatoes. I use Extra Virgin Olive Oil, almond butter, coconut or soy milk, and other natural non-dairy items. I am not doing Vegan but I am using alot of vegan substitutes for dairy products. I am still using honey & eating some eggs (but soon I'm going to cut out eggs, too). If I have the "munchies", I have been eating almonds or granola. I've learned to read carefully & buy from Fred Meyer's organic bulk section because many granolas use wheat! The learning curve is great and I plan to try to bake some gluten-free goodies at some point. I've made soup a number of times (Apple squash soup was a favorite). Kelly and Hollie have been encouraging me to buy whole, fresh, and organic whenever possible. The hard thing is that we have ...

Back to work today!

Thanks for the prayers! I am getting better - YEA! I stayed in most of the weekend & this morning I was much improved. The meds are doing their job. I am hopeful that I won't get the next virus or bacteria that comes down the pike. I am trusting God to help me find the right path to build up my immune system.

New Diet Continues

Well, I have completed 9 days of my new diet: gluten free, dairy free, & sugar free!! I haven't improved yet (health-wise) but time will tell! I had to return to the doctor on Friday. My asthma was making it hard to breath (I felt like I had someone sitting on my chest) & my inhaler didn't help. I also have bronchitis! SIGH! I got more meds & a new long lasting inhaler & hopefully I'll start to improve. This past week was rough. I am so thankful for God's Word that encourages during times like this. Last Sunday I filled in for the Primary Sunday School class and taught the story of Elijah and the widow and her son. She was one meal away from starving to death (even harder than that - seeing your son starve to death). Even though it didn't make sense, she trusted God and prepared food for Elijah. January Brings Changes!

I have been plagued with chronic sinus infections and congestion and have been pretty much been under the weather continually since winter started. Truthfully, I have been SICK AND TIRED OF BEING SICK AND TIRED! A week ago I visited my Dr. & he put me on yet another prescription of antibiotics. As of yet, I haven't really improved! Something has to change!! I have an appt. to see a doctor that will help build up my immune system. The first thing that she will do is put me on an emlination diet so I decided to get started NOW. I have entered the gluten-free, sugar-free, and dairy-free zone!!!! Honestly, at first it seemed over whelming, however, the possibility that it can help me feel better is worth the effort. Becca, Hollie, & Kelly have been helping me find recipes and tips on where to buy some items - it is becoming very exciting! The last few days haven't been difficult at all. Wow, that is amazing!! I will keep you posted on how my search for good health is going ...
